How do I choose between brass, copper and kansa?
Choose by use: copper is best kept for drinking water, kansa is traditionally used for eating and serving, and brass is used for cooking vessels, pooja items and idols. Brass and copper cooking vessels are traditionally tin-lined (kalai) because the bare metals react with sour and salty foods, so ask us whether a piece is lined. Many families keep a little of all three.
Can I cook sour food in brass or copper vessels?
Only if the vessel is tin-lined. Bare brass and copper react with sour and salty foods such as tamarind, tomato, curd, citrus and pickles, which is why cooking vessels in these metals are traditionally lined with tin, known as kalai. Keep unlined pieces for water and dry foods, and ask us whether the piece you are buying is lined.
How do I clean brass and copper utensils?
Clean brass and copper with tamarind pulp or a paste of lemon juice and salt, rub gently, then rinse and dry immediately. For daily washing, mild dish soap and a soft scrubber are enough. Coloured, nickel-plated and antique-coated finishes should only be wiped with a soft cloth, and tin-lined interiors should not be scoured hard.
How do I care for cast iron cookware?
Dry cast iron straight away and keep it lightly oiled. Wash it while warm with hot water, and a little mild soap if needed, dry it on the stove for a minute, then wipe on a thin film of oil. Never leave it soaking or put it in a dishwasher, and avoid plunging a hot pan into cold water.
How do I start using a new soapstone pot?
Season a new soapstone pot before cooking in it, and always heat it gradually. A common method is to soak it in water for a day, let it dry, coat it with oil inside and out, and leave it for a day or two before heating it gently with water. Use it over a low flame on gas; soapstone will not work on induction.
