Choosing pressure cookers

We carry three triply ranges. Stahl offers the widest choice, from 1, 1.5 and 2.5 litres up to 6, 8 and 10 litres, including 3 and 5 litre broad and 3.5 litre pan versions; the Bergner Argent Classic comes in 3.5 and 5.5 litres; and Aceware offers 3 and 5 litre tall cookers. Match capacity to your household

As a rough guide, 1 to 2.5 litres suits one or two people, 3 to 3.5 litres a small family, 5 to 6 litres a family of four to six, and 8 to 10 litres large households or festival cooking.

Tall, broad or pan?

Tall cookers take stacked separators, so rice and dal can cook together. Broad and pan-shaped cookers have a wider base that makes it easier to sauté onions and masala, stir, and serve straight from the cooker, which suits pulao, biryani and one-pot curries.

Never overfill the cooker

Fill a pressure cooker no more than two-thirds full, and only half full for dal, rice and other foods that froth. Keep the vent clear, replace the gasket when it hardens or leaks steam, and use the maker's genuine spares.

What is the difference between a triply and an aluminium pressure cooker?

A triply pressure cooker has a stainless steel cooking surface backed by aluminium, so it heats evenly without reacting with sour ingredients such as tamarind and tomato. A plain aluminium cooker is lighter and heats quickly, but it can react with acidic food and discolour over time. Triply is heavier, and many families value its durability.
