Brass Kadai
Brass kadais have been part of Indian festive cooking for generations, valued for deep-frying murukku, chegodilu and vadas, roasting rava, and stirring halwa or laddu mixtures for Diwali and Sankranti. The rounded, two-handled shape makes it easy to stir and lift, and a gleaming brass kadai looks handsome when it goes straight to the table at a family get-together.
Three sizes are available, No. 1, No. 2 and No. 3, so you can match the kadai to everyday tempering or to larger festival batches. - Avoid cooking tamarind, tomato or curd-based gravies in unlined brass; ask us about tin lining (kalai).

- Wash in warm soapy water and dry with a soft cloth straight away to prevent water spots.

Is a brass kadai good for deep-frying?
Yes, brass kadais are traditionally used for deep-frying snacks such as murukku, chegodilu and vadas. Avoid sour or salty gravies unless the kadai is tin-lined, and wash and dry it soon after use so the brass stays bright.
