Kansa Kadai
Kansa, or bell metal, is a bronze alloy of copper and tin that has been used for Indian cookware and tableware for generations. A kansa kadai is used much like any kadai, for tempering, sautéing vegetables, making poriyal and stirring halwa, and many cooks who grew up with bronze vessels prefer the way it handles a low to medium flame. Its golden colour also makes it a handsome serving piece.
Choose a Small kadai for tempering and side dishes, or a Medium one for everyday vegetables and sweets for the family. It suits cooks who enjoy traditional metals and are happy to give them a little extra care. You are welcome to handle both sizes at our Sullurupeta showroom, and we can share photos on WhatsApp if you would like to compare before visiting.

What is kansa, and how is it different from brass?
Kansa is bell metal, a bronze alloy of copper and tin, whereas brass is an alloy of copper and zinc. Kansa has a softer golden tone and is traditionally prized for tableware and gentle cooking, and it needs careful handling and drying after every wash.
Can a kansa kadai be used on a high flame?
It is best not to. Cook in a kansa kadai on a low to medium flame, avoid heating it empty, and let it cool before washing. Gentle heat protects the metal and is all that tempering, sautéing and sweets need.
