Kansa Handi
Dal, rice, payasam and festive gravies all have a traditional home in the kansa handi, a rounded pot of bell metal, the bronze of copper and tin. Its shape looks equally at ease on the stove and on a festive table, so the same vessel can cook a dish and then serve it. How do I keep a kansa handi shining?
Wash it with mild soap, dry it at once and polish it now and then. A paste of tamarind or lemon with a pinch of salt, rubbed gently with a soft cloth, brings back the shine; avoid steel wool, which scratches bell metal.
