Brass Tope

A tope, also called topu, is one of the hardest-working vessels in a traditional South Indian kitchen: a rimmed brass pot used for cooking rice, boiling milk and making sweet pongal or payasam in family-sized batches. Many households also keep larger topes for storing drinking water or grains, and bring them out for weddings, gruhapravesam and festival cooking, when brass vessels are still very much part of the occasion.

Sizes run from No. 7 to No. 18, so you can pick a modest tope for daily rice or a large one for function cooking, each in a Plain or Hammered finish. Brass is traditionally tin-lined (kalai) for sour or salty dishes, so ask us whether a particular piece is lined. Care & use

  • Do not store pickles, tamarind, curd or citrus in unlined brass, as sour foods react with the metal.
  • Clean with a tamarind or lemon-and-salt rub, rinse well and wipe dry at once to slow tarnishing.
  • Ask in store about tin lining (kalai) before cooking sour or salty dishes in the tope.

What do the numbers No. 7 to No. 18 mean on a brass tope?

They are traditional size numbers, and generally a higher number means a larger pot. No. 7 is among the smaller sizes we stock, while the upper numbers suit large families and function cooking. Because capacity varies with design, comparing sizes in the showroom is the surest way to choose.

Can I cook sambar or rasam in a brass tope?

Only if the inside is tin-lined (kalai). Unlined brass reacts with sour and salty foods such as tamarind, tomato and curd, which is why traditional cooks have their brass vessels tinned for this kind of cooking. Ask us whether the tope you like is lined before you buy.
