How do I stop paniyaram from sticking to a cast iron pan?
Keep the pan well seasoned and properly heated. Preheat on a medium flame, add a few drops of oil to each cavity before pouring the batter, and turn each paniyaram only once the base has browned and releases easily. The seasoning improves with regular use.
