Should I choose the soapstone kadai With lid or Without lid?
Pick With lid if you often make gravies, kootu or dishes that simmer covered, or want to keep food warm at the table. Without lid suits poriyal and stir-fries that you cook open and stir often. Both options come in Small, Medium and Big.
Can I use a soapstone kadai on an induction stove?
No, soapstone does not work on induction, because an induction stove needs a magnetic metal base. Use the kadai on a gas stove instead, starting on a low flame and raising the heat slowly so the stone warms evenly.
