Soapstone Urli
The urli, or uruli, is a wide, shallow vessel with a long history in South Indian kitchens, especially in Kerala and Tamil Nadu. In soapstone it is used for slow-cooked dishes such as poriyal, kootu, avial and payasam, where gentle, even heat suits the food. Stone also holds its warmth once the stove is off, so dishes stay warm when the urli goes to the table.
Pick Small, Medium or Big depending on whether you cook for two or for a larger family. Like all soapstone, a new urli needs seasoning before its first use and a gentle, gradual flame, which makes it a good match for cooks with a little patience. Visit us in Sullurupeta any day except Monday to see the three sizes, and ask about seasoning while you are in the store.

What is a soapstone urli used for?
A soapstone urli is used for slow-cooked dishes such as poriyal, kootu, avial and payasam. Its wide, shallow shape gives room to stir, and because stone holds heat, it can go straight to the table and keep the food warm while you serve.
Can a soapstone urli go on a gas stove?
Yes, soapstone vessels are traditionally used over a flame, but heat them gradually. Start on low, raise to medium slowly, and avoid placing a hot urli on a cold or wet surface. Soapstone will not work on an induction stove, which needs a magnetic base.
