Soapstone Kalchatti
The kalchatti, also spelt kal chatti or kalchetty, is the stone pot many South Indian families swear by for sambar, vatha kuzhambu, mor kuzhambu and rasam. Soapstone heats slowly and evenly and keeps the dish warm for some time after it leaves the stove, which is why it is often carried straight to the table. It is also traditionally used for setting and keeping curd.
There are three sizes, Small, Medium and Big: a small chatti for rasam or curd, a bigger one for a family pot of sambar. Before its first use, a kalchatti has to be seasoned, and it should always be heated slowly, so it rewards cooks who enjoy the traditional way of doing things. What is a kalchatti used for?
A kalchatti is a soapstone pot traditionally used for sambar, kuzhambu and rasam, and for setting curd. Because the stone holds heat, many families also use it to keep a dish warm on the table after cooking.
Do I need to season a kalchatti before use?
Yes, a new kalchatti should be seasoned before you cook in it. A common practice is to soak it in rice water for a day or two, coat it with oil, then heat it gently with rice water on a low flame. Ask us for the method we recommend.
