Soapstone Mortar & Pestle
Before mixers arrived, South Indian kitchens relied on stone to crush and grind, and a soapstone mortar and pestle keeps that habit alive for small jobs. It is ideal for pounding ginger and garlic, crushing pepper and jeera for rasam, or making a coarse chutney for one meal. Because soapstone does not react with sour ingredients, it is also handy for tamarind and lemon-based pastes.

Can I pound tamarind or lemon-based pastes in a soapstone mortar?
Yes. Soapstone does not react with sour ingredients, so tamarind, lemon and tomato pastes are fine. Rinse it after use so strong flavours and colours do not linger, and dry it fully before storing.
Does a soapstone mortar and pestle need seasoning?
It does not need full seasoning like a cooking pot, but it helps to prepare it once. Grind a handful of raw rice a few times, rinse, and repeat until the rice stays clean; this clears loose stone particles before you crush spices.
